Harvest Notes

Both varieties were fermented in stainless steel tanks using specialized yeast for optimal extraction of color, tannins, flavors, and textures. The wine was aged in 100% new French oak 225L barriques produced by the highly sought after and allocated cooperage by Vincent Darnajou. These barrels really help to soften the tannins and bring the sweet fruit tones and baking spice together.

The Cabernet in this vintage was very special, so much so that we needed to keep a couple of barrels to showcase this wine on its own. Just a touch of Syrah blended in to bring more depth, softness, and added layers of complexity to bring the greatness of the Cabernet to life.

Bold and broad-shouldered, the 2021 Cairjn Cabernet Sauvignon delivers a silky mouthfeel once on the mid-palate. Peppered bacon, venison blood and loganberry preserves all dance well with mocha and exotic spices on the palate.
