Each lot was carefully hand sorted and 70% destemmed before being fermented in stainless steel tanks with specialized yeast for optimal extraction of flavors and textures. The wines are racked only once for blending in the Spring following the initial harvest and then again to tank for bottling the following year.

It was special to combine Grenache from two different regions: the Paso fruit being bigger and bolder, while the Santa Ynez fruit being brighter, softer with less tannin. Together they create an elegant, feminine and expressive Grenache full of good acidity and minerality.
