Harvested the third week of September, Assyrtiko is one of the later ripening white varieties found throughout the central coast. Whole cluster pressed then cold-settled for 48 hours before racking into 1 – 500L amphora vessel and the remaining into a stainless steel tank for primary fermentation. The wine is fermented at cool temperatures for optimal extraction of fruit and floral characters. After primary the amphora vessel is topped up and we racked the remaining wine into 1 – 320L used barrel. A small amount of sulfur is added to prohibit malolactic fermentation. Periodic battonage (stirring of the lees) is employed during elevage to further enhance textures, mouthfeel, and complexity in the wine prior to bottling.

Harvest Notes

The nose is fragrant with citrus and delicate floral notes accompanied by a fresh sea breeze. On the palate this is a wine that shines with bright acidity and flavors of lemon zest and oyster shell.

Tasting Notes

The natural acidity and salinity in Assyrtiko lends itself to perfectly pair with several dishes especially with those with briny or citrusy accents.

  • Carnivore: Grilled octopus or calamari, and seafood dishes including oysters, lobster, or sardines.

  • Vegetarian: Lemon pepper cauliflower or citrus-dressed bean salads.

  • Cheese: Salty cheeses & spreads such as Feta, haloumi, aged Greek cheeses and Cotija.

Culinary Pairings

The Greek Ship symbol honors Santorini, where Assyrtiko first took root in volcanic soil and sea-swept winds. By ship, was once the only way to access the Greek island. The ship sails not just across water, but through time, carrying the legacy of ancient trade, ritual, and resilience. And now, that journey continues here at Cairjn. By fermenting and aging Assyrtiko in terracotta amphora, we echo the ancestral methods of the Aegean. Each bottle is a voyage.
