A blend of 5 different clones of Syrah al fermented in closed top stainless steel tanks using specialized yeast strains for optimal extraction of color, tannin, and flavors. Free run and press wine fractions are kept separate using only the best barrels for our Syrah program. The wine is racked only once for blending in the Spring folowing the initial harvest and then again to tank for bottling the folowing year.
Harvest Notes
Aromas of dark fruits, violets, and coffee. On the palate, concentrated flavors of blackberries, mocha, and smoked meats, a fu l body with structuraly balanced tannins, and what feels like a welcome never-ending finish.
Tasting Notes
Bold and full-bodied with its dark fruit flavors, spice, and smoky undertones. It pairs beautifuly with foods that can stand up to its intensity and complement its savory depth.

Culinary Pairings
The Trilobite is our homage to the terroir and geological history of Paso Robles. It is an ancient marine creature, fossilized in time. Ancient seas receded, leaving behind a tapestry of marine fossils— crushed shels, coral fragments, and limestone-rich sediment. Marine fossils infuse the earth with calcium and trace minerals, enhancing drainage and regulating vine stress. This results in grapes with a mineral signature that speaks of time itself. This geological memory unfolds in every glass of our Syrah.
