Harvest Notes

Inspired by the bold, mineral-rich reds of Priorat, Spain, this distinctive 2023 blend reflects both Old World heritage and California spirit. Crafted with 62% Carignane, 25% Mourvèdre, 8% Syrah, and 5% Cabernet Sauvignon, it offers a savory, layered profile that nods to Priorat’s legendary Grenache & Carignan powerhouses while showcasing its own sense of place. Fermented in stainless steel tanks using specialized yeast for optimal extraction of color, tannin, flavors and textures. The wines are racked only once for blending in the Spring folowing the initial harvest and then again to tank for bottling the folowing year.

Tasting Notes

On the nose, aromas of black plum, wild herbs, and graphite evoke the intense purity found in classic Priorat wines like those from Clos Mogador and Alvaro Palacios, where slate and limestone uplift the fruit. The palate builds with brambly berry, crushed black cherry, earthy minerality, and a hint of smoked spice—rich yet finely balanced—with firm, polished tannins reminiscent of the region’s signature structure.

Culinary Pairings

A touch of Mourvèdre brings savory depth and subtle gaminess, while Syrah adds spice and dark fruit intensity, and Cabernet Sauvignon contributes structure and finesse. The result is a wine of layered complexity, resonant with Priorat’s bold character but grounded in Paso Robles’s diversity—a red that pairs beautifuly with roasted meats, rich stews, and dishes with Mediterranean herbs.

  • Carnivore: Herb Crusted Lamb Chops, Crispy Whole Roast Duck, or Mediterranean Beef Stew

  • Vegetarian: Mushroom Risotto, Roasted Stuffed Peppers, or Pizza

  • Cheese: Manchego, Herbed Goat-Cheese, or Tronchón

Symbol

The Sun is the star architect of Priorat, where vines cling to impossible hilsides of iconic fractured black slate soils. The heat of the long, golden days concentrates the fruit and gives the region’s red table wines their unmistakable power and warmth. The region’s signature grapes—Garnacha and Cariñena—thrive in these harsh conditions. To honor that lineage, our Carignan driven Red Table Wine is meticulously crafted with thoughtful intent and carries the symbol of the sun — a reminder that every bottle is shaped by the same relentless briliance that defines Priorat itself.
